INGREDIENTS
1 lb lean ground beef
3 Tbsp. olive oil
4 Tbsp unsalted butter
2 tsp sea salt or kosher salt
1 clove garlic minced
Freshly ground black pepper to taste
½ tsp Worcestershire sauce
6 strips lean bacon
DIRECTIONS
Preparation
Fry bacon on side burner until nearly done, stiff but not crisp
Set aside to cool
Chop bacon into small pieces
Place ground beef in large mixing bowl
Add bacon pieces, shredded cheese, olive oil, Worcestershire sauce, garlic
Fold ingredients together
Form 3 round balls of burger
Gently press the burger balls to approximately 1-2” thick patties
Place in cooler or refrigerator to chill at least 30 minutes
Melt butter
Method
Pre-heat a clean grill to HIGH
Remove chilled burger patties from cooler
Salt & Pepper to taste
Brush one side of burger patties lightly with melted butter
Place patties buttered side down on one side of grill and reduce heat to MEDIUM
Leave the other side of grill on HIGH
Let the patties cook for approximately 5-7 minutes with lid closed.
Brush top side of burger patties with remaining butter
Use a long spatula lightly coated with cooking spray or oil to lift patties and place buttered-side down on the other side of grill you left on HIGH.
Reduce heat to MEDIUM and close lid
Allow to cook for approximately 5 minutes and remove
Allow patties to rest on platter covered with aluminum foil for about 2 minutes
Prepare buns with fixings
Serve and enjoy
NOTE: Everyone has personal preferences about the type of meat used in making a burger. And everyone has their own preference as to the doneness of the cooked meat. I like mine medium "Pink" made with 80:20 ground chuck - feel comfortable with the butcher where I get my ground beef. The USDA recommends 160F degrees for all ground meats
