INGREDIENTS

large flank or round steak - about 2 inches thick
1/3 cup low sodium soy sauce
1/4 cup red wine vinegar
1/4 cup water
3 cloves minced garlic
1 Tbsp minced fresh ginger
1 Tbsp ground Chinese-style hot mustard powder
1 tsp ground cumin
A container of HOT Chinese-Style mustard for dipping

DIRECTIONS

The steak can be fully prepared and ready for the grill prior to heading to your meal so you have less work to do when guests arrive. 

Preparation
Tenderize beef steak with fork or specialty tool for this purpose, approximately 100 times before placing in a sealed plastic bag or glass dish that can be covered.  Marinate steak in soy sauce, minced garlic and black pepper overnight.
1 hour before grilling remove steak from marinade and dry off excess marinade from surface of steak using paper towels. Discard the used marinade.


Method
Pre-Heat grill to Medium High
Spritz steak with canola oil or other neutral flavor high heat grilling oil and place steaks on clean hot grates.
Turn once when the first side has sear marks
Remove from grill and place in holding tray away from direct heat and brush with brushing with your favorite BBQ sauce.
Recommended to cook to no more than Medium Rare or 145F degrees internal temperature
Rest steak on cutting board for at least 15 minutes before thinly slicing on an angle cross grain.
