4beef tenderloin steaks cut1 inch thick (about 1 pound total) 1 large clove garlic, halved 1/2 tsp kosher or sea salt 1/2 tsp of freshly ground black pepper 2 tsp chopped fresh parsley Topping: 2 Tbsp cream cheese 4 tsp crumbled blue cheese 4 tsp plain yogurt 2 tsp minced onion dash of white pepper
PreparationCombine the ingredients for the toppin in small bowl. Rub beef steaks with garlic.Lightly season steaks with salt and pepper about 5-10 minutes before grilling
MethodPre-heat grill to HOT 450F – 650F degreesSpritz steaks with canola oil or other high temperature grill oilGrill steaks for 8-to-11 minutes, turning once. About two minutes before steaks are done, use a spoon to place topping and allow to melt onto steaks - you can also remove steaks (before it overflows) to a covered pan and allow them to restSprinkle with parsley.
