6 1-inch-thick NY Strip steaks about 8 oz each 1 lb unsalted butter soft/room temperature 2 tsp crushed chipotle chile pepper 1 tsp ground cumin 1 teaspoon Dijon mustard 2 cloves fresh garlic 2 oz orange juice Dash of Worcestershire sauce 2 cups creamy Gorgonzola cheese Salt and pepper to taste
PreparationPlace butter and chipotle, and other ingredients in a bowl. Mix thoroughly - Place in refrigerator to cool down.Sprinkle steaks generously with salt and pepper.
MethodPre-heat grill to Medium-High heat.Sprits steaks on both sides with canola oil or other neutral flavor high-temp grilling oilGrill steaks to desired doneness - about 5 minutes per side for medium-rare.Season with salt and pepper both sides of the romaine halves. Grill each side of the romaine for about a minute (just enough to impart some flavor and change the texture a bit). Place romaine hearts on the plate. Sliced steak cross grain in thin angled slices and serve on lettuce with the maytag blue cheese dressing.
