INGREDIENTS
1 ½ chicken
½ onion
½ t. whole black peppercorns
2 ribs celery
1 whole carrot cut in half
1 T. salt
1 t. garlic powder
1 t. paprika
½ t. onion powder
½ t. chile powder
½ c. brown sugar
¼ c. monterey jack cheese
¼ c. favorite barbecue sauce
DIRECTIONS
Serves 4
Place onion, peppercorns celery, and carrots in a pot. Place chicken in the pot and bring to a boil. Lower heat and let simmer for 15 minutes. Remove chicken from the poaching liquid.
Mix garlic powder, paprika, onion powder, chili powder, brown sugar
In a bowl. Season chicken with spice mixture on both sides. Place chicken on medium hot grill skin side down. Brush with barbecue sauce. Cook for 3 to 5 minutes. Flip chicken over for another 3 to 5 minutes. Brush chicken with barbecue sauce. Remove chicken from the grill. Let chicken cool down to the touch. Using a fork remove the chicken from the bone. Place cheese on your favorite bun. Place pulled chicken on top.
