INGREDIENTS

8 – 12 lamb loin chops
4 Tbsp olive oil
3 Tbsp dark balsamic vinegar
1 Tbsp Worcestershire sauce

DIRECTIONS

Lamb Loin Chops—A mouth-watering tender cut that can simply be grilled, broiled or pan-fried. Double loin chops can be served up as "lamb t-bone."

Prep time:  1+ hour (includes marinade time)
Cook time: 10 - 12 minutes
Serves: 4
 

1. Preheat grill to HIGH and make sure the grates are CLEAN.
2. Salt and pepper lamb chops and spray with light coating of cooking spray or brush on melted butter to ensure meat is well oiled.  This will help create the grill marks. 
3. Reduce heat to MEDIUM and place lamb chops off center from flame and on HOT grids to allow searing for a few minutes then turning and placing on new section of HOT grill.  Allow to sear for just a few minutes on this side.
4. Place all chops on one section of grill and turn off flame under that section - allow to “roast” for a few minutes more with grill lid closed.
5. Total cooking time from start to finish is about 5-6 minutes per side including the indirect roasting.
6. Remove chops from grill before they reach desired internal temperature and place together on clean warm plate, cover and let stand for at least 10 minutes – allowing for the internal temp of the chops to rise approximately 10 degrees and continue cooking to desired internal temperature. 
NOTE: Use a meat thermometer during cooking check for doneness – 145F for Medium-Rare, 160F for Medium, 170F for Well. 

Serve with grilled sweet onions, grilled vegetables and salad greens.
