INGREDIENTS
4 to 5 large multi colored heirloom tomatoes (cut into ½ in thick slices)
½ red onion
2 strips apple wood smoked bacon
3 tablespoon balsamic vinegar
2 tablespoon extra virgin olive oil
Salt and Ground Black Pepper
¼ cup crumbled blue cheese
¼ cup yellow currants
DIRECTIONS
Celebrity Chef Marvin Woods is garnering many accolades with his New American cooking at his restaurant M Woods in North Miami, "The Upper East Side" of the south. Chef Woods, a graduate of the Academy of Culinary Arts, hosts his popular television show Home Plate on Turner South Network six days a week. He has also been featured on CBS The Today Show, CNN, Discovery Channel, O Magazine, Southern Living, Food & Wine, and has authored two cookbooks.
Preheat the grill to high.
Toss the red onion in a bowl and use a little of the olive oil over the onions. Season with salt and pepper.
Place onions on the grill and cook for 2 to 3 minutes or until the onions start to become soft. Remove the onions and place into a bowl. Place bacon on the grill and turn as needed to cook the bacon on the grill. Remove the bacon from the grill. Allow to cool. Chop bacon and place in the bowl.
Place tomatoes on the grill and cook for 30 seconds (you want to get a good marking on the tomatoes but you want them to remain a little firm). Remove tomatoes from the grill and place in the same bowl. Add vinegar, onions, oil and salt and pepper.
Gently mix together.
Spoon out Ingredients and place on plate. Sprinkle with blue cheese and currants
