INGREDIENTS
8 oz lamb breast, tenderloin, sirloin or other lamb meat cut into small bite-size pieces
2 oz fresh lemon juice
4 oz fruity olive oil (I like Kalamata!)
1+ Tbsp crushed garlic
1 Tbsp finely chopped cilantro
1 tsp Chinese-style dry mustard
1 tsp red pepper flakes
1 tsp fresh ginger
1 tsp kosher salt
1 tsp fresh ground black pepper
1 tsp fennel seed
1 tsp rosemary
DIRECTIONS
This makes an excellent party appetizer and can be prepared by guests on the grill - to their own liking!
Preparation Time: 20 minutes + marinating time
Cooking Time: 20 minutes
Serves: 2 skewers
1. Pre-heat grill to HIGH (with RED infrared, set to Rotisserie setting)
2. Reduce heat and grill skewers on MEDIUM heat for 3-4 minutes each side, until marks are browned in…remove from grill and cover to continue cooking10-12 minutes or until done.
2. Place skewers on plate for easy serving.
4. Use slices of Pita or Naan bread as plates, along with lemon juice or garlic sauces.
