INGREDIENTS
3 cups cooked orzo (do ahead the day before and store in the fridge - or make extra when cooking as a hot dish.)
1 cup chopped & drained tomatoes (2 tbsp juice reserved)
1/2 cup small cubes of gouda, swiss, pamesean or other semi-hard cheese that you enjoy.
6 oz chilled cooked spinach, chopped and squeezed dry
1/3 cup chopped red-skinned tart apples
2 Tbsp apple cider vinegar
1 clove garlic - finely minced
1 tsp kosher salt
1/2 tsp ground ginger
1/4 tsp freshly ground pepper
1/4 cup regular olive oil - you may substitute any good vegetable oil with a neutral flavor as the dish gains flavor from the other !
DIRECTIONS
This is a tasty side dish for grilled fish, prawns, pork and chicken - and makes a quick mid-week meal a bit more elegant!
Preparation
Place cooked orzo in a large serving bowl and stir in tomatoes and spinach.
In a small bowl, whisk together remaining Ingredients (except eggs), pour over orzo and toss.
Garnish with hard-boiled eggs, parsley, tarragon, grilled chicken or prawns.
