Pork chops are on the menu of many American homes because they are an easy to prepare and economical cut of meat. Try your hand at this recipe to deliver a tasty and moist chop on your dinner plate!
Preparation
You may prefer to brine pork chops – this is helpful with the leaner cuts like pork loin – if so, allow appropriate time for this process, approximately 4 – 8 hours. Remove from brine and rinse under tepid water, dry with paper towels
salt and pepper pork chops and spray lightly with canola oil
Method
Pre-heat grill to HIGH
Spritz surfaces of chops with canola oil or other neutral and high temperature cooking oil - then place chops on grill - turn down to MEDIUM and sear mark on both sides, using tongs to turn
Remove seared chops to holding tray that has barbeque sauce in it. Turn and coat both sides of chops, cover and allow residual heat in the grill and in the chops to continue to cook - about 5 -7 minutes.
Remove chops from holding tray and place on grates that are still set at MEDIUM and under which a smoking tray with wood chips has been set.
Heat the glaze just enough to caramelize but not burn while the smoke 'kisses' the chops and clings to the glaze.
Serve immediately.
