INGREDIENTS

1 rack of baby back pork ribs, about 3 - 4 lbs
CB's EZ Rub

DIRECTIONS

Purchase your pork baby back ribs from a butcher or meat department you know.  Have them remove the membrane from the underside of the ribs…you don’t need it.

Preparation
The day before the cook, usually that night, remove the ribs from the packaging material and dry off with a paper towel. Remove the membrane on the undersaide of the ribs.  Apply as much rub as you like - working it into the meat with your hands - all over.  Place the ribs in a plastic bag or wrap in plastic and return to cooler or refrigerator overnight.

Method
Place entire side of ribs on a medium-hot grill set up for indirect heat; close grill hood and cook until ribs are tender, about 2 hours and maintain grill temperature of about 275F -300 degrees F.  If you like - add wood chips in a smoker box for additional flavor.
Finish by placing ribs over direct heat and apply a light coating of glaze or sauce - using tongs to turn every 2-3 minutes so they don't burn. Continue to lightly basting with barbecue sauce on the top side of ribs with each turn.  This effort will result in a delicious glaze on the ribs.
Serve ribs directly from the grill by cutting into portions or, for extra tender ribs, remove from the grill and wrap in heavy-duty food grade plastic wrap; let ribs rest on counter covered in towels or in an insulated container for up to an hour.
Unwrap ribs, cut into serving pieces and serve with extra barbecue sauce.
