1 16oz pork loin chop roast with ribs
Your prefered brine recipe for pork
Your favorite rub for pork
DIRECTIONS
Pork Loin Chop Roasts are most often seen as individual chops or as the delicious “Crown Roast.” The smaller cut of 3-4 ribs is an excellent choice for grill-roasting by this method.
Preparation
You may like to brine this cut of meat prior to cooking. Allow at least 8 hours for that process. Remove roast from brine and rinse under tepid water, dry with paper towels. Season with your favorite rub for pork and work into the meat.
Method
Preheat grill to High set up for indirect cooking
Reduce heat to Medium-High and place roast on grates to sear - use tongs to turn and sear all sides – each taking approximately 5 minutes.
Use an instant-read thermometer to check for doneness – 145F for Medium-Rare, 160F for Medium, 170F for Well – remembering that internal temperatures of the meat will continue to raise about 10 degrees while it rests.
If additional roast time is desired, turn off one side of grill and place roast on that side bones down and allow convection heat to roast meat to desired doneness.
Remove from grill and place on carving board or plate to rest about 15 minutes, tent with aluminum foil if desired.
Use a sharp carving knife and slice between bones to cut equally sized chops.
