INGREDIENTS
4 chicken breasts bones & skin removed. (you may substitute thigh meat if you prefer.)
8 pita pocket breads
2 cups plain yogurt
1 cup feta cheese
olive oil for brushing
Salt & pepper to taste
2 cups lettuce shredded
1 cup tomato chopped
1 cup sliced black olives, rinsed and drained
DIRECTIONS

Preparation
Soak wooden skewers in water for 30 minutes.
Cut chicken meat into 1 inch by 2 inch pieces.
Place chicken on skewers, season with salt, pepper and brush with olive oil.
In a small bowl combine feta cheese and yogurt. Chill.
Method
Preheat the grill to HOT. Reduce heat to Medium.
Grill chicken, turning often to prevent burning, until done.
Wrap pitas in foil and warm on the grill.
Take a pita, put a skewer of chicken in, pull the skewer out, add yogurt cheese mixture.
Top with lettuce and tomato slices and sliced black olives.
Serve on a platter with sliced fresh seasonal fruit.
