"Bunk Bed" Style Chicken in The Big Easy

1 whole fryer chicken cut-up into pieces
seasoning - your favorites

DIRECTIONS

This recipe was inspired by Mike "Pit Pirate" Hedrick a guest chef, professional BBQ caterer and all-round good guy, who contributes thoughts, recipes and stories to Sizzle on the Grill.  It's a great way to prepare chicken parts - they come out tasting like fried chicken, all crispy on the outside and juicy inside! Char-Broil has come up with a design inspired by users that's called The Big Easy Easy-Out Cooking Rack.

Place the lightly seasoned (salt & pepper or whatever you enjoy) chicken in the cooking basket: legs with the meat side out and joint in the center and positioned the thighs around with meat exposed to the sides.

Place the cooking basket into the cooker, turn on The Big Easy.

Check at about 45 minutes later by lifting the cooking basket with the provided handle, set on a tray and instert an instant read thermometer into the thickest portion of meat on the chicken parts. 

Cooked chicken should be 160F.  If the thermometer reads just a bit under that - you can remove the chicken and cover it with aluminum foil and a kitchen towel, to rest and continue cooking.
