INGREDIENTS

8 Tbsp unsalted butter, softened
1 Tbsp horseradish
1 Tbsp anchovie paste
1/2 tsp Worcestershire sauce
5 roasted and crushed garlic cloves
1 small shallot finely chopped

DIRECTIONS

Preparation
In a small bowl mix ingredients with fork to blend completely - if you desire, you may heat it in a sauce pan over low until the garlic and shallots are translucent.
Cover and refrigerate until needed

 

Uses
When steaks or chops are seared and marked and you are placing them into the holding pan to finish, brush on a liberal amount of glaze on all sides of meat to be absorbed into the meat during finishing. When plating the meat, be sure to pour or ladle juices that accumulate in finishing pan on meat!
