INGREDIENTS

3/4 c. real maple syrup, must be authentic
1/4 c. soy sauce
1/4 c. Kentucky Bourbon
4 wild salmon steaks approximately 6 - 8 oz each

DIRECTIONS


Preparation
Combine first 3 Ingredients in a bowl. Pour into plastic bag along with salmon steaks and marinate for up to 24 hours. Turn bag over 3 to 4 times during the marinating period so the mixture covers all parts of the fish. Remove fish from the marinade and pat dry.

 

Method
Preheat grill to Medium High (350F – 450F degrees)
Season the flesh side of the salmon with freshly ground black pepper.
Spritz the skin side with canola or other high temp grilling oil.
Place salmon, skin-side down and grill over direct heat about 5 – 7 minutes
Spritz the flesh side with canola or other high temp grilling oil and use a spatula to slip between grates and salmon skin – lifting and turning to sear the flesh of salmon.
Test the corner of the salmon by lifting with the tip of the spatula or tongs to see if the flesh is releasing from the grates – as a sign that it’s done.
Quickly slip the spatula under the salmon and plate.
