INGREDIENTS

2 medium yellow squash-cut into 1/2 pieces
2 medium zucchini-cut into 1/2 inch pieces
1 onion, cut into 8 pieces
Salt and pepper
8 crimini or white mushrooms cut into quarters
1/2 cup Italian-style salad dressing
Other veggies you enjoy

DIRECTIONS

Preparation
Combine all vegetables except mushrooms with half of dressing. Add salt and pepper to taste. Marinate 2 hours.
Marinate mushrooms with remaining dressing separately.


Method
Pre-heat grill to Medium
Spritz a metal grill topper with canola oil and place on the grates to warm
Add veggies and grill about 15 - 20 minutes until crispy on the edges - stiffing as needed to prevent flare-ups
Add mushrooms for the last 5 minutes.
