INGREDIENTS

1 large head of broccoli, cut into florets
1 large shallot, sliced into thin rings (about 2 Tbsp yeild)
1 handful toasted walnuts, roughly chopped
2 Tbsp pomace olive oil
1 Tbsp unsalted butter
Salt and pepper to taste

DIRECTIONS

Method
Preheat oven or outoor grill to 375F degrees. 
On side burner, saute sliced shallot over medium heat with butter and 1 Tbsp pomace olive oil - until shallots begin to caramelize
Combine caramelized shallots together with broccoli and place in a cast iron skillet that has been pre-heated to the cooking temp or an oven safe serving dish. 
Roast, uncovered about 2o minutes until crisp-tender. 
Sprinkle with toasted walnuts and serve

NOTE: I like to lightly spritz a little blueberry vinegar on the dish just before serving.
