INGREDIENTS
1 bell pepper diced
1 largeonion diced
1 tsp minced garlic
1/2 lb smoked butt (secret ingredient)
2 lbs smoked sausage - sliced or such
1 lb dry red beans
1 1/2 tbls Lowry's or cajun seasoning
1/2 tbsp black pepper

Lostarrow is a regular contributor to conversations at Sizzle on the Grill and this winter it was unusually cold and snowy - he wrote: "It snowed in southern Mississippi this weekend & was too cold to grill outdoors. We fixed some red beans & rice in the good ol' crock pot cause that's comfort food!"
Method
Rinse dried beans & place in 5-6 qt crock pot and cover about an inch above beans with water.Cook beans on high for 3 hrs. Add remaining ingredient's (holding back 1&1/2 lb sausage). Cook 6 hours more till the beans are tender. For lower cal. cook sausage on grill or stovetop to remove some of the fat - but, if you don't care, put sausage in crock-pot for 45min. Remove sausage links. (If you cook the sausage in the crock pot the beans will take on a lot of flavor from the sausage so wait to add the dry seasonings until after the sausage is cooked and removed.) I use Lowery's seasoning salt, black-pepper & Tabasco. After seasoning to taste, add the sausage back into the pot and serve over cooked rice with toasted french bread
