Though it may not sound like fun, mopping in grilling is actually a wonderful way to enhance flavor to meats. It’s particularly beneficial to use with tougher cuts of meat that need long cooking over low heat.

A mop sauce is a thin liquid, often based on tomato juice, vinegar, apple cider, beer or a combination of these ingredients, that’s “mopped” onto food numerous times during cooking. Moisten the meat with mop sauce every 20 minutes or so while its over the coals. Use a long-handled basting brush that will stand up to the heat of the grill and be sure to close the grill’s lid immediately after mopping.

Basic Beef Mop Sauce

Prep Time: 10 minutes


  • 2 cups beef stock
  • 3/4 cup Worcestershire sauce
  • 1/3 cup canola oil
  • 2 teaspoons kosher salt
  • 2 teaspoons onion powder
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons dry mustard
  • 1 1/2 teaspoons black pepper
  • 1 1/2 teaspoons cayenne
  • 1 teaspoon hot sauce
  • 1 teaspoon garlic powder


  1. Mix all ingredients together thoroughly.
  2. Store in an airtight container.
  3. Use within one week.
