Grilled Corned Beef and Cabbage Wrap

Grilled Corned Beef and Cabbage Wrap with Chipotle Thousand Island Sauce

  • 1 corned beef with seasoning packet
  • 1 head of Napa cabbage (cut in half)
  • 2 cups beef stock
  • Oil or melted butter
  • Applewood pellets (optional for smoke flavor)
  • Salt and pepper
  • 2 tortillas
  • 1/2 cup grated Swiss cheese
  • Chipotle Thousand Island Sauce (recipe to follow)
  • Chipotle Thousand Island Sauce
  • 1 cup mayonnaise
  • 1 tablespoon cider vinegar
  • 1 teaspoon sugar (optional)
  • 2 tablespoons ketchup
  • 2 tablespoons minced scallions or red onions
  • 2 tablespoons chipotle sauce
  • Salt and pepper to taste


    For The Sauce
  1. Mix the mayonnaise, cider vinegar, sugar (optional), ketchup, minced scallions or red onions and chipotle sauce together.
  2. Salt and pepper to taste.
  3. For The Beef
  4. Fill the bottom of the infuser with 2 cups of beef stock to add flavor while steaming the corned beef.
  5. Top with the infuser grate.
  6. Sprinkle the seasoning packet on the corned beef and place on the grate.
  7. Simmer the corned beef on low, lid off, for about 1 hour.
  8. Place lid on and steam until tender (about 4 hours.)
  9. For The Wrap
  10. Take cabbage halves and brush with oil or melted butter, and sprinkle salt and pepper.
  11. Quickly sear the cabbage halves.
  12. Slather the Chipotle Thousand Island sauce on the tortillas.
  13. Sprinkle with grated Swiss and chopped cabbage.
  14. Add a layer of sliced corned beef and roll the wraps.
  15. Brush wraps with oil and grill on medium high till cheese is melted.
  16. Cut into pieces or serve whole.
