Grilled London Broil with Parsley Pesto

For the longest time I was so confused about London Broil, until I learned that the name doesn’t specifically represent a cut of meat. It’s more of a way to prepare flank steak.

One of the best things to do with flank steaks is a marinade. Marinades add a flavor punch to economical cuts of beef such as flank steak. They also serve to tenderize this tougher cut of beef. Simply prepare the marinade and add it and the steak to a plastic food bag. Seal it and marinate it overnight in the refrigerator. To brighten up the steak, I have added a simple recipe for parsley pesto. I love a thick pesto but feel free to add additional olive oil if you prefer yours a little thinner. This addition takes this everyday “London Broil” and makes it something really special.

A zesty marinade plus light and bright parsley pesto take grilled flank steak to a new level.


    For the London Broil
  • 1/4 cup soy sauce
  • 1/4 cup rice wine vinegar
  • 2 tablespoons hoisin sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon sesame oil
  • 1 tablespoon hot sriracha
  • 1 1/2 pounds beef flank steak
  • For the Pesto
  • 1 small bunch flat leaf parsley
  • 1/3 cup slivered or sliced almonds
  • 1/2 cup freshly grated Parmesan
  • 2 tablespoons minced garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4-1/2 cup olive oil


    For the London Broil
  1. In a small bowl, mix the soy sauce, vinegar, hoisin sauce, garlic, sesame oil and sriracha.
  2. Place flank steak in a resealable bag. Pour the marinade over the flank steak. Marinate overnight, turning occasionally. Bring the steak to room temperature before grilling.
  3. Preheat the grill to high.
  4. Grill each side of flank steak for 4-5 minutes, turning at the 2-minute mark on each side to create cross hatch marks.
  5. Remove from the grill and tent lightly with foil.
  6. Cut thinly across the grain and serve with pesto.
  7. For the Pesto
  8. Combine the parsley, almonds, Parmesan, garlic, salt and pepper in a food processor. Pulse until roughly chopped.
  9. With the processor still running, add 1/4 cup of olive oil through the feeding tube. Test for consistency and add additional oil to the desired texture.
  10. Transfer to a small bowl and serve with London Broil.
