I AM LOOKING FOR A WIRELESS THERMOMETER WITH A SENSOR INSIDE THE COOKING CHAMBER TO TELL ME HOW HOT THE COOKING AREA IS.  THERMOSTATS ON THE BURNERS ALL SHOW 650 TO 700 DEGREES UNDER THE COOKING AREA.  I NEED TO KNOW THE TEMP IN THE COOKING AREA. ADVISE.

Is the insulation on the sensing wire for the meat probe a plastic or metal mess? I have a large professional Texas style wood-fired, indirect heat BBQ. I have had problems with these remote sensor wires getting destroyed in the main cooking section.
