Try your hand at some mouth-watering baby back ribs with a homemade rub & BBQ sauce from the Char-Broil Nights Chicago Pop-Up Event, courtesy of Chop Shop.

Homemade BBQ Sauce

Yield: 2 Quarts


  • 1 minced onion
  • 7 cloves of chopped garlic
  • 3 pints of chopped gala apples
  • 4 oz apple cider vinegar
  • 6 oz Worcestershire
  • 3 oz molasses
  • 3 teaspoons olive oil
  • 5 cups of ketchup
  • Salt & pepper to taste


  1. Sweat onion in pot with oil
  2. Add garlic and apples
  3. Cook until apples are soft
  4. Add wet ingredients
  5. Simmer
  6. Let cool
  7. Blend until desired consistency
Baby Back Rib Brine


  • 3/4 qt apple cider vinegar
  • 1 cup white distilled vinegar
  • 1 cup sugar
  • 3 qt water
  • 1½ cup kosher salt
  • 1/8 cup cayenne pepper
  • 1½ cup light brown sugar
  • 1 oz garlic powder
  • ¼ cup chili powder
  • 4 full slabs of baby back ribs
Chop Shop Butcher’s Rub


  • 4 tsp brown sugar
  • 4 tsp salt
  • 1 ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp ground sage
  • ¼ tsp ground thyme
  • 1.4 tsp mustard seed
  • pinch of cayenne pepper


  1. Bring brine to a boil then let cool.
  2. Submerge ribs in cooled brine for 3 hours.
  3. Remove and pat dry.
  4. Apply rub generously making sure to cover both sides. (CS Rub Salt, spices, onion, garlic, mustard, vegetable oil, & brown sugar)
  5. Once rubbed they are ready for smoker.
  6. The smoker should be set to 225°F with apple or cherry woodchips.
  7. Smoke 4-5 hours until internal temperature of ribs reaches 160° F.
