Basic Fried Turkey

Serves 10-12 People
For the turkey
whole turkey, 12-13 lbs
Spice rub, if you like
Aromatics, like herbs, onions and/or citrus



The day of your meal, make sure your cooker is on a level area that is located in a place that is out of the wind.

Hot Tip: Weather conditions will influence cook times.

Wipe the cooking basket with a paper towel that is lightly coated with vegetable oil. This will prevent minor sticking that can occur. Leave the turkey out after rinsing so that it achieves room temperature before cooking.


There is no need to baste while cooking. And be sure to avoid any rubs or sauces with sugars on the outside of the bird. These will caramelize, burning long before the bird is done.


Place the bird with the breast up in the cooking basket and place the basket in the cooker. Turn it on.


At 12 pounds, it should take around 1 1/2 hours to cook to just under 10°F from the target temp. Use the handle to lift the basket and set it on a baking sheet. Probe various parts with a digital thermometer.


To remove the bird lift the basket and unceremoniously 'dump' the bird into a holding tray. Cover the bird with aluminum foil making sure to seal the edges of the tray. Place a couple of towels on top to serve as additional insulation. It will continue to cook, retaining all moisture sealed in by the infrared 'sear.'

    I’m confused. Reading through your recipes for a 12-13 pound turkey, some say cook an hour and half, some say two hours. Some say preheat 5 minutes, others say 30. Some say cook on medium hi, others on hi. Looks like no matter what seasoning you use, the cooking time, temp, etc would all be the same! There doesn’t seem to be any consistency! I know you should use a thermometer, but it’s all confusing. Is there one set way y’all recommend?

      We recommend cooking until the internal temperature reaches 165°F. Generally the time estimates are to give you an idea of how long it will need to cook.
