cups apple cider or substitute juice

tablespoons chili powder

tablespoons tamarind paste

tablespoon butcher grind black pepper

tablespoon hot sauce, can add more to taste

teaspoon ground ginger
1
teaspoon chipotle powder
1
teaspoon kosher salt
1/2
teaspoon vanilla extract

Ingredient Tips

Tamarind Paste
Tamarind paste, from the fruit of the tamarind tree, tastes very sour, with a somewhat citrusy taste and notes of smoke and caramel. When combined with sugar, tamarind gives dishes a subtle, sweet-sour flavor.

Combine ketchup, brown sugar, vinegar, apple cider, mustard, honey, garlic, onion, chili powder, tamarind paste, pepper, hot sauce, ginger, chipotle powder, salt and vanilla in a 3-quart saucepan. Simmer until the tamarind paste has dissolved and all ingredients have combined.

Then, bring sauce to a rapid boil and boil for 5 minutes. Cool for 10 minutes.
