Easy Grilled New York Strip Steak


Some of the best things in life are simple, just like a New York strip steak recipe. Fire up your grill, season your steaks and sear away.

For the Steak
8 ounce New York strip steaks, 1 inch thick
sea salt
black pepper, freshly ground



Remove steaks from packaging and pat dry.


Lightly season both sides with salt and pepper. Let rest for 30 minutes.


Preheat grill to high heat, between 450°F to 650°F.

Hot Tip: You will be using both direct and indirect heat. If using a larger grill, heat only one side of the grill.

When ready, place the steaks over heat, cooking three minutes per side. You want to create a nice sear.


Turn heat to medium and move steaks away from direct heat.

Hot Tip: This can be to the warming rack or to the other side of the grill.

Check for doneness using an instant-read thermometer. Look for 130°F for a rare doneness.


When steaks reach the desired temperature, remove from grill. Allow the steaks to rest for at least two minutes. The temperature will continue to rise to approximately 140°F for medium rare.

    Substituted LaRue’s Dillon Dust for salt and pepper. Pulled it off the grill at 130 degrees.

    Do you cook the steaks with the lid open or closed ?

      Typically, you keep the lid open when grilling steaks for grill marks on both sides and a medium-rare center. If you want them more done than medium-rare, close the lid to contain the heat.
