Ingredients

For the pineapple

pineapple, ripe, peel and cut into 6 slices

tablespoons dark rum

teaspoon granulated sugar

cup whipped cream
1/4
cup shredded coconut, toasted

Directions

Add rum and sugar into a bowl with the pineapple. Mix to coat the slices evenly. Cover and let it rest for 3 to 5 minutes.

Preheat the grill to medium-high heat.

Lightly sear the pineapple directly over the heat for about 10 minutes. Make sure the fruit does not become overly charred.

Remove pineapple from grill and top with whipped cream and coconut. Add a heaping scoop of your favorite ice cream.
