Looking for a new twist on dessert you can make on your grill? This Grilled Skillet Cookie is gooey in the middle and crunchy on the outside. It begins with standard cookie batter, then adds dark chocolate chips, white chocolate chunks and walnuts.

Ingredients

For the Cookie

  • 2 sticks butter, unsalted and softened
  • 2 cups light brown sugar, packed
  • 2 teaspoons vanilla
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup semi-sweet dark chocolate chips
  • 1 cup white chocolate chunks
  • 1 cup chopped walnuts

For the Toppings

  • vanilla ice cream
  • chocolate sauce
  • caramel sauce
  • sprinkles
  • whipped cream

Preheat grill to 375°F.

Using a mixer on high speed, combine butter and sugar until light and fluffy, 5 to 7 minutes.

Add vanilla and eggs (one at a time) and continue to mix on medium speed.

Then, add salt, baking soda, baking powder and flour, mixing slowly until combined.

Using a spatula, fold in the chocolate chips, chunks and walnuts.

Transfer the mixture to a 10” cast-iron skillet that has been sprayed or coated with cooking oil.

Place the skillet onto grill grates for 25 to 30 minutes or until lightly browned on top and soft in the center.

Top with vanilla ice cream, chocolate and caramel sauces, sprinkles and whipped cream.
