Grilled Strawberry Shortcake

Nothing says warmer weather like fresh strawberries. Embrace the spoils of the season with this light and fresh = deconstructed take on the traditional strawberry shortcake. This  bite-sized grilled strawberry shortcake is pure goodness. The heat of the grill caramelizes the natural sugar of the berry and adds a great smoky taste.

Ingredients

Serves 4
For the strawberry

tablespoons butter
3
tablespoons honey
2
tablespoons brandy

strawberries
2
tablespoons walnut oil
For the shortcake
4
refrigerated buttermilk biscuits, halved
 
vanilla bean ice-cream, and/or whipped cream
 
cinnamon to garnish
 
sugar to garnish

You may substitute the biscuits for pound cake.

Preheat the grill to medium high.

Hot Tip: Make sure the grill grates are well-oiled and clean. Strawberries have a lot of natural sugar in them and can stick to the grill.

Combine the butter, honey and brandy in a small saucepan. Cook over medium heat and whisk to combine well. Reserve.

Skewer the strawberries and brush with walnut oil.

Grill the strawberries 1-2 minutes per side, or until grill marks are well-defined.

Remove the strawberries from grill and drizzle with the brandy glaze.

Grill the biscuits 1-2 minutes per side, turning from "10 o'clock to 2 o-clock" half way through grilling each side to create a diamond pattern.

Remove biscuits from grill. Top with glazed strawberries and a scoop of ice cream and/or a dollop of whipped cream. Dust with fresh ground cinnamon and sugar.
