Fill a large pot with water. Add potatoes and 2 tablespoons of salt. Boil for 15 minutes, drain and let cool until safe to touch.
Grilled Sweet Potato Fries with Chipotle Mayo
Healthier than deep frying, Grilled Sweet Potato Fries are seasoned simply with salt, grilled until golden brown and served with a Chipotle Mayo dipping sauce that’s spicy and tangy. These delicious fries are tender on the inside and crispy on the outside. When dipped in the sauce, they’re smoky and flavorful with just the right amount of kick.
Combine mayonnaise, hot sauce, lime juice, garlic powder and pepper in a medium-size bowl. Set aside in the refrigerator.
Preheat your grill to 450°F.
Cut potatoes into wedges. Brush with olive oil. Sprinkle remaining salt on both sides of potato wedges.
Place potato wedges on the grill. Cook for 3 to 4 minutes per side.
