Ingredients Serves 4
For the burger

pound ground sirloin

pound ground brisket
1/2
pound short ribs, boneless
 
salt and pepper
For the toppings
4
brioche buns
1 1/2
tablespoons butter, melted
For the sautéed mushrooms
1
pound mixed mushrooms
1/2
teaspoon garlic, minced
1/2
teaspoon shallot, minced
1
teaspoon kosher salt
2
tablespoons vegetable oil
1
tablespoon unsalted butter
For the caramelized onions
1
pound yellow onion, julienned
1
tablespoon shallow, minced
1
tablespoon garlic, minced
2
tablespoons vegetable oil
1
tablespoon unsalted butter
1
tablespoon kosher salt

Short Ribs
These can be substituted for 1 1/2 pounds ground beef.
Directions

Mix all meat together well and form into four equal-size patties. Season with salt and pepper.

Make the mushrooms. Heat a large sauté pan over medium-high heat. Add oil, coating the pan's surface. Add mushrooms and 1/2 of the salt. Allow to cook.

When mushrooms stop releasing water and begin to brown, drain excess oil. Add butter, shallot and garlic. Reduce heat slightly and continue to cook until garlic and shallot are soft and translucent. Season to taste with remaining salt. Set aside.

Make the onions. Using the same sauté pan, heat over medium-low heat. Add oil, coating the pan's surface. dd onions and half the salt, cooking over medium-low until the onions begin to soften and color.

Drain any excess oil and add butter, shallot and garlic. Continue to cook over medium-low, being careful not to burn, until onions are a deep caramel color. Season with remaining salt to taste. Set aside.

Grill patties over high heat, 3 to 5 minutes per side. Top with Castello® Burger Blue Cheese slices and allow to melt.

Put mushrooms and onions into one pan over medium heat. Heat thoroughly.

Toast buns, cut sides down for about 2 minutes or until toasted to your liking.

Place burger and cheese on bottom half of bun. Top with mushrooms and onion. Cover with top bun and serve.
