Orange Sriracha Pacific Rim Chicken Legs

These Pacific Rim Chicken legs are perfect for a quick weeknight dinner. They require little preparation and have a short cook time. Not to mention, these sweet and spicy legs are a fantastic alternative to wings.

Ingredients

For the Pacific Rim Rub

teaspoons turbinado sugar

teaspoon kosher salt

teaspoon ground black pepper

teaspoon curry powder

teaspoon roasted ground ginger

teaspoon granulated garlic
1/4
teaspoon Tiger Seasoning

teaspoon cinnamon
1/8
Chinese 5 spice
For the Orange Siracha Glaze

cup marmalade
3
tablespoons chicken stock
1 1/2
tablespoons sriracha
1
tablespoon rice wine vinegar
1/4
teaspoon ground black pepper
For garnish
1
tablespoon sesame seeds
3
fresh basil leaves, tightly rolled and sliced

Turbinado Sugar
Using this sugar, the rub is less likely to burn during grilling.
Directions

Preheat your grill to medium-high heat.

While the grill preheats, mix together all rub ingredients. Coat legs in melted butter and season evenly all over with the Pacific Rim Rub.

Place chicken on the upper rack of your grill, close the lid and let cook for 25 minutes. Rotate the wings every 5-7 minutes during this time.

Meanwhile mix all of the glaze ingredients in a small sauce pan on the side burner, set to medium heat. Bring to a simmer and whisk together for 2-3 minutes, just long enough to combine. Turn off heat.
Hot Tip: Strain your sauce through a sieve if you prefer a smoother texture.

After the chicken has cooked for 25 minutes, baste legs on all sides with the Orange-Sriracha Glaze. Close the lid and cook another 5 minutes.
Hot Tip: When your sauce is loaded with sugars, wait until the end to glaze.

Remove from heat, garnish with sesame seeds and basil.
