cup pineapple jelly/preserves

cup teriyaki sauce

cup chicken stock

teaspoon rice wine vinegar

teaspoon soy sauce

teaspoon crushed red pepper flakes

Ingredient Tips

Pineapple Jelly/Preserves:
Use jelly for thinner sauce and preserves for thicker sauce. Preserves take 10-12 minutes while jelly takes about 15 minutes. Pineapple habanero jelly can also be substituted for red pepper flakes.
All-Purpose Chicken Seasoning
A homemade, all-purpose chicken rub recipe works as well as commercial chicken seasoning. To make a quick, all-purpose seasoning, mix 1 1/4 teaspoon kosher salt, 1 1/4 teaspoon coarse ground black pepper and 1/2 teaspoon of garlic granules.
Teriyaki Sauce
Teriyaki sauce consistency varies, so opt for a thick one.
Red Pepper Flakes
Substitute with a heaping 1/4 teaspoon of cayenne pepper or, to kick it up notch, use designer dried chile flakes.

Directions

Place uncovered wings on a cooling rack over a sheet pan and in the refrigerator for one hour. This will dry out the surface of the wings, making them easier to brown and will yield a crispier texture.

Place all the sauce ingredients into a small saucepan and bring to a near-boil. Reduce heat and let simmer for 10-15 minutes or until the sauce begins to thicken.

Preheat your grill to medium-high heat (400-450°f).

Season the wings entirely and toss to coat.

Place the wings on the grill, close the lid and cook for 15 minutes.

Flip the wings, close the lid and cook another 15 minutes or until the internal temperature reaches 180°f.

Reduce heat to medium-low (300°f), sauce the wings and cook 5-10 minutes or until the sauce sets on them.
