Ingredients

Serves 6-8

cup vegetable oil
1
pound pork breakfast sausage meat
1
pound shredded hash brown potatoes
1
yellow onion, diced

eggs
8
ounces shredded Cheddar cheese
1
cup salsa
 
salt and pepper to taste
4-6
large flour tortillas

Directions

Prep: 15 Minutes, Cook: 20 Minutes

Place griddle on top of cool grill grates.

Preheat your grill to 500°F, making sure that it is on a level surface.

Generously oil your griddle with vegetable oil.

Place the hash brown potatoes on the griddle and cook for 3 to 5 minutes.

Add the sausage meat and diced onions to the griddle, next to the hash browns, in separate sections. Continue cooking for another 8 to 10 minutes, turning occasionally to cook evenly.

Move the hash brown potatoes, sausage meat and diced onions to the top half of your griddle to free up space to cook the eggs.

Oil the open space and pour beaten eggs on the griddle and cook until desired doneness, about 2 to 4 minutes. Once fully cooked, remove the hash browns, sausage meat, diced onions and eggs from your griddle.

Load hash brown potatoes, sausage meat, diced onions, scrambled eggs, shredded Cheddar cheese and salsa onto tortillas and fold to form burritos.

Place the folded burritos back on the griddle and cook for 15 seconds per side.

Remove from griddle and serve.
