Ingredients Serves 4 Pork Steaks
For the pork

pork shoulder steaks, 1/4 to 1/2 inch thick
 
favorite BBQ sauce
1
can of your favorite beer
 
spray oil
For the rub
4
tablespoons sweet paprika
1
tablespoon kosher salt
1/4
teaspoon fresh cracked black pepper
3
tablespoons brown sugar
2
tablespoons garlic powder
1
tablespoon onion powder

20 Minutes for Prep, 1 Hour and 45 Minutes for Cook

Prep the grill for indirect, lower heat around 250 and 300 degrees Fahrenheit. Make sure one side of the grill is turned off.

Make the rub, mixing all dry ingredients together. Rub the pork steaks with the rub. Refrigerate for one hour to overnight.

Place the steaks on the indirect zone of the grill. Add wood chips and smoke for about 30-45 minutes. Brush during cooking with a mix of BBQ sauce and your favorite beer to keep your pork moist. This mixture of BBQ sauce to beer should be around 80/20.

Increase the temperature to 350 to 400 degrees Fahrenheit to finish. This should take an additional 45 minutes or so.

Finish the steaks by moving them to direct heat to caramelize and brown. Cook pork until an internal temperature of 165 degrees Fahrenheit is reached.

Take pork steaks off grill off and let rest. Serve with your favorite BBQ sauce.
