Easy Smoked Chicken Thighs

Want a flavorful and juicy piece of smoked chicken?  Try smoked chicken thighs.  Full of delicious dark meat, chicken thighs are incredible when smoked. Naturally more moist than other parts of the bird, their higher fat content renders nicely in a smoker. This recipe.

Ingredients

Serves 6 People
For the Smoked Chicken Thighs

chicken thighs

tablespoon soy sauce

teaspoon sesame oil
3
garlic cloves
3
scallions
1/2
tablespoon thyme
1
teaspoon allspice
1
teaspoon black pepper
1/2
teaspoon cinnamon
1/2
teaspoon crushed red pepper

Directions

Mix soy sauce with sesame oil and lightly rub into the chicken thighs.

In a food processor, combine garlic cloves, scallions, and spices until smooth. Rub the mixture onto and underneath  the skin of the chicken thighs.

Seal chicken in a plastic bag. Place the bag in the refrigerator and let marinate for a minimum of 4 hours.

Preheat smoker to 225°F and add cherry wood chips.

While the smoker preheats, remove the chicken thighs from the refrigerator. You will want to remove them at least 30 minutes prior to cooking. Discard the marinade and place the thighs into the smoker.

Smoke for 2 hours, rotating throughout the cook. The chicken thighs will be done once reaching an internal temperature of 165°F.

    Next time I might add a touch of oil to the spice mixture since it was very thick and clumped under the skin. Nice flavors.

    Chicken thighs, bone in, skin on, my favorite smoked meat. Always juicy and tender. Always on sale, 88-99 cents a pound. Brining in salt, is my favorite, you can add garlic, soy sauce, Frank's red hot sauce...... the list is endless. A very forgiving meat choice. I often cut the meat off and make soft shelled tacos. Enjoy.
