Serves 4
For the Pork Tenderloin
pound pork tenderloin
tablespoons yellow mustard
cup apple juice, in a bottle spritzer
handful of applewood chips
For the Dry rub
tablespoons kosher salt
tablespoons coarse ground black pepper
tablespoons paprika
tablespoon granulated garlic
tablespoon granulated onion

Prep: 10 Minutes, Cook: 4 Hours

Preheat your smoker to 225°F.

Evenly combine salt, pepper, paprika, garlic and onion in a small bowl.

Cover the pork tenderloin with mustard and liberally apply dry rub. Place the tenderloin in the refrigerator until smoker reaches 225°F.

Place the pork tenderloin in the smoker and spritz with apple juice every 45 minutes until internal temperature of 165°F, about 2 1/2  to 3 hours.

Hot Tip: If you prefer to tame the smoked flavor, wrap your pork tenderloin in butcher paper roughly 90 minutes into the cook. This will prevent your pork tenderloin from absorbing additional smoke.

Remove from smoker and let rest for 10 minutes. Slice and serve.

Hot Tip: Cook your pork tenderloin thoroughly to an internal temp of 165°F for smooth, even slices.

Cut the tablespoons to teaspoons as is a lot of pepper for a rub. Used recipe as called out on 2 lbs of pork loin, and was more than enough rub. Cut down to 145 - 150F for internal temp. or too dry. 2hrs. 15 min @ 225 F was perfect. Good recipe, very tasty!
