Ingredients

Serves 6-8
For the pork

1 pound pork tenderloins, trimmed
4
thin slices prosciutto
For the stuffing
1/4
cup fresh breadcrumbs
2
tablespoons fresh parsley, minced
2
teaspoons fresh rosemary, minced
1
clove garlic, minced
2
tablespoons extra virgin olive oil
 
salt and pepper to taste

Prep: 10-15 Minutes, Cook: 2-3 Hours

Preheat smoker to 225°F, about 40 minutes. Add a handful of cherry wood chips to the smoker box.

Place the tenderloins on a cutting board. Drape the prosciutto across the top of one tenderloin with the slices hanging over the sides.

In a medium-size bowl, combine breadcrumbs, parsley, rosemary and garlic. Spread evenly over the prosciutto. Fold the slices over the stuffing and set the second tenderloin on top.

Using kitchen twine, tie the tenderloins together at about 1-inch intervals. Liberally salt and pepper the meat and set it on a rimmed, foil-lined baking sheet.

Place the tenderloin in the smoker.  Set the digital thermometer for 145°F. Insert the probe end of the thermometer into the thickest part of one of the tenderloins.

Smoke until the internal temperature reaches 145°F, 2 to 3 hours. Let the tenderloin rest for 10 minutes.

Hot Tip: Cooking times will vary based on tenderloin size.

Remove the string and slice.
