How to Season a Char-Broil Digital Electric Smoker
WHAT IS SEASONING?
Seasoning means powering up your smoker while it’s empty and operating it at the maximum temperature setting before you actually cook with it for the first time.
WHY DO YOU NEED TO SEASON AN ELECTRIC SMOKER?
Seasoning an electric smoker prepares it for cooking by burning off any residues, like machine oils and dust, left over from the manufacturing process. It also helps to protect your smoker and extend its life. You only need to season your smoker once, when it's brand new. The overall process takes about two hours, but after that, you won’t have to do it again.
HOW DO YOU SEASON AN ELECTRIC SMOKER?
It’s actually pretty simple and the smoker does most of the work. Follow these step-by-step directions and you’ll be on your way to smoking delicious food in no time.
Directions

Place racks, water pan and smoker box inside the smoker.
Hot Tip
Do NOT fill the water pan with water or the smoker box with wood chips.

Plug in the smoker.
Hot Tip
The digital display will light up and a beep will sound when the unit is plugged in.

Press the Power button once; the control unit is now ready.

Press the Temp button. Then, using the Up and Down buttons, set the temperature to 275°F (max setting).

Press the Time button. Then, using the Up and Down buttons, set the time to 2 hours.
Hot Tip
When 2 hours have elapsed, a beep will sound to alert you

Press the Power button to turn off the smoker, open the door and allow it to cool.
Hot Tip
The smoker will be HOT during use. Allow it to cool completely or wear protective gloves when working inside the smoker.

Once the seasoning process is complete, your smoker is ready for use.
