Cajun Pork Tenderloin Sliders with Spicy Slaw

Try this recipe for Cajun Pork Tenderloin Sliders with Spicy Slaw when you want to spice things up. Pork tenderloins are relatively lean and easy to grill. Double the recipe and make a big batch of sliders for dinner and have some leftover for lunch or a midnight snack. Take them along to your next potluck, picnic or tailgate party. They’re always sure to be a crowd-favorite.


For the Slaw

  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon pepper
  • 1 teaspoon hot sauce
  • 1/4 teaspoon celery seed
  • 1/2 cup shredded carrots
  • 6 cups shredded cabbage

For the Pork

  • 1 pork tenderloin
  • 1/2 tablespoons Cajun seasoning
  • 4 buns
  • 1/2 cup BBQ sauce
  • 1 clove garlic, minced

In a medium-size bowl, mix together the mayonnaise, vinegar, Cajun seasoning, salt, sugar, pepper hot sauce and celery seed together. Add carrots and cabbage to the mixture and toss until evenly coated. Refrigerate for 1 hour before serving.
Remove the membrane and any external fat from the pork tenderloin. Season the tenderloin on all sides with Cajun seasoning. Set it aside at room temperature.
Hot Tip
Pinch the meat to pull the membrane away from the muscle. Slide your knife under the membrane and slowly cut along the muscle toward the thick end of the meat.
Preheat your grill to 350°F to 400°F.
Place your tenderloin on the grate directly over hot coals. Rotate the meat every 5 to 6 minutes, or rotate continuously using a universal rotisserie until the internal temperature reaches 145°F, about 25 to 30 minutes.
Remove meat from grill and rest for at least 3 minutes.
While the pork is resting, toast slider buns on hot grates.
Rub the minced garlic down the length of your cutting board. Then drizzle the BBQ sauce over the garlic.
Place the tenderloin on top of the BBQ sauce. Slice thinly, allowing the slices to fall over into the sauce and garlic.
Assemble sandwiches and serve with spicy slaw.
