Cilantro-Lime Grilled Corn on the Cob

Ingredients
FOR THE CORN
- 12 ears of corn
- 1/4 cup finely shaved Parmesan cheese
- > lime zest
- > salt to taste
- > freshly ground pepper to taste
FOR THE CILANTRO-LIME BUTTER
- 1 stick unsalted butter, at room temperature
- 1 cup chopped cilantro leaves
- 1 lime, juiced and zested
- 1-2 garlic cloves, minced
- 1 teaspoon cayenne pepper
- > salt to taste
- < freshly ground pepper to taste

Preheat your grill to 400°F.

Soak corn in a pot of warm, salted water for 20 minutes.

Meanwhile, pulse butter, cilantro, lime juice, garlic and cayenne pepper together in a food processor. Season with salt and pepper to taste.

Remove all but a single layer of the husk from the corn. Pull back the remaining husk and remove the silk.

Brush each ear of corn liberally with cilantro-lime butter. Then pull the husk back over the corn.

Grill corn for 12-15 minutes, turning until all the sides are nicely charred.

Remove corn from the grill. Remove remaining husk and brush with more cilantro-lime butter.

Garnish with Parmesan cheese and lime zest. Add salt and pepper to taste.
