Grilled Bell Pepper With a Fried Egg

Ingredients
For the Grilled Bell Peppers
- 2 large bell peppers
- 4 large eggs
- 4 slices of Swiss cheese
- 1/2 cup crumbled bacon
- 1/4 cup chives, chopped
- salt and pepper to taste
- hot sauce (optional)
Directions

Preheat your grill to 300°F.

Slice bell peppers in half lengthwise and core the interior.

Insert a slice of Swiss cheese into each bell pepper, pressing the cheese down to the bottom of the pepper’s cavity.

Crack an egg into each pepper and top with crumbled bacon. Season with salt and pepper.

Set stuffed peppers on a grill topper . Place the topper onto hot grill grates and close the lid. Cook to desired doneness, about 20 minutes.

Remove grilled peppers from grill. Top with freshly chopped chives and hot sauce (optional).
