Grilled Breakfast Burrito Recipe
Start your day right with our Grilled Breakfast Burrito. These burritos are loaded with hash browns, crumbled chorizo sausage with onions and scrambled eggs. Pico de Gallo and a Mexican blend of cheeses give them even more flavor before they get a quick sear on the griddle for a little crunch. This recipe uses a carbon-steel griddle stone, but you could also use a 4-burner gas griddle and make the same delicious breakfast.
Ingredients
For the Burritos
- 1 pound chorizo sausage, crumbled with casings removed
- 1 pound shredded hash brown potatoes
- 8 eggs, beaten
- 1 red onion, diced
- 8 ounces shredded Mexican blend cheese
- 1 cup pico de gallo, or your favorite salsa
- 4-6 large flour tortillas
- vegetable oil
- salt and pepper, to taste

Preheat your grill to 500°F, with your griddle stone in place, on top of cool grates.
Hot Tip
Make sure your grill is on a level surface.

Drizzle griddle surface with oil, then add hash brown potatoes and cook for 3 to 5 minutes. Add chorizo and onion to the griddle, in separate sections, and continue cooking for another 8 to 10 minutes, turning occasionally to cook evenly.

Using your chopper/scraper, move everything to one side of the griddle to make room for the eggs. Add oil if needed, then pour beaten eggs onto griddle and cook to desired doneness, about 2 to 4 minutes. Season the eggs with salt and pepper.

Load tortillas with cooked hash brown potatoes, chorizo, diced onions, scrambled eggs, cheese and Pico de Gallo and fold into burritos. Place the burritos on the griddle and cook for 15 seconds per side.

Remove burritos from griddle and serve.
