Ingredients

For the Fruit Tart

  • 1 tablespoon plant based butter, melted
  • 1 tablespoon maple syrup
  • 1 sheet puffed pastry, thawed
  • 2 tablespoons turbinado sugar for sprinkling, optional
  • 1 large lemon
  • 2 medium fresh peaches, cut into pieces
  • 10-11 fresh strawberries, stems removed, halved
  • 1 cup fresh pineapple, cubed
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon salt
  • 8 ounces plant-based cream cheese, softened
  • 1/2 teaspoon vanilla
  • 2/3 cup powdered sugar
  • mint, optional

Preheat your oven to 425°F. Yes, this uses the oven AND the grill.

In a small bowl, mix together plant based butter and syrup.

Roll out the pastry to approximately 10”x10”.

Score all four edges to make a 1” border. Brush the edges with the butter mixture. Sprinkle sugar on the edges if desired. Bake for about 15 to 20 minutes until puffy and brown.

Coat the surface of your grill with oil or cooking spray and then preheat the grill to 300°F.

While baking, grate lemon to zest to measure 1 tablespoon and add it to a bowl. Cut lemon and squeeze juice into a bowl. Add peaches, strawberries, pineapple, brown sugar and salt. Toss gently.

Add fruit to skewers and then grill 2 to 3 minutes, flip and cook for another 2 to 3 minutes

In a bowl, cream together the plant based cream cheese, vanilla and powdered sugar.

Spread the cream cheese mixture onto the inside of the pastry. Add grilled fruit on the top. Add mint leaves on top if desired.
