Nothing says special occasion quite like Grilled Rotisserie Prime Rib with a basic black and white rub. This expensive cut of meat can be intimidating but it's actually quite simple to grill, especially with a rotisserie unit. Rotisserie cooking is one of the oldest and time-tested methods to bring out exceptional roasted meat flavor. The continual rotation of the meat keeps the juices rolling, basting the meat on the inside and out, keeping it tender and juicy.

  • 1 (5-pound) rib roast
  • salt & pepper to taste

Remove upper cooking racks and preheat grill to 300°F.

Pat roast dry with paper towels and liberally season with salt and pepper.

Push the long central spit of the <a href="https://www.charbroil.com/universal-rotisserie-1">rotisserie</a> through the roast from end to end, as close to the center as possible. Slide the rotisserie's forks into place to grip the roast tightly. Rotate the shaft to check its balance.
Hot Tip
The meat must be balanced on the rotisserie to ensure it cooks evenly and doesn’t overwork the motor.

Place spit on rotisserie unit, turn on and close the lid.

Cook to an internal temperature of 110°F for rare or 115°F for medium-rare doneness (approximately 10 to 15 degrees below your desired doneness), about 2 hours.
Hot Tip
To check temp, raise the lid from time-to-time and insert an instant-read thermometer into the roast, avoiding fat, bone and the metal spit.

Remove and place on plate or tray, cover with aluminum foil and a kitchen towel. Allow the roast to rest until it reaches 120-129°F for rare or 130-134°F for medium-rare, about 20 minutes.
Hot Tip
Giving your meat the time it needs to rest allows juices to redistribute, retaining moisture for tender meat. The internal temperature will continue to rise 10 to 15 degrees until it levels out and then begins to fall.
