Smoked Cauliflower with Peach BBQ Sauce

Craft your own peach-based BBQ sauce that combines over a dozen spices, Worcestershire, peppers, syrup and more and slather it on a slow smoked whole cauliflower.

Ingredients

For the Cauliflower

  • 1 large head cauliflower
  • 2 tablespoons high heat oil, grapeseed
  • 2 tablespoons BBQ seasoning

For the Spicy Peach BBQ Sauce

  • 1 pound fresh or frozen peaches, thawed
  • 1 whole habanero (omit if you don't want spicy sauce)
  • 1 cup ketchup
  • 2 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons vegan Worcestershire sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 salt
  • 1/4 teaspoon dry mustard

Heat one side of your grill to 225°F.
Hot Tip
Add peach wood chips to grill for extra flavor.

Cut off green leaves from cauliflower. Cut enough of the stalk off the bottom so that your cauliflower sits flat on the grill.

Brush olive oil over cauliflower. Evenly sprinkle BBQ seasoning across the cauliflower.

Add seasoned cauliflower to grill on the indirect heat side of the grill. Close the grill.

Cook 3 to 4 hours or until tender enough for a fork to go through the stalk of the cauliflower.

While cooking add all ingredients for peach BBQ sauce to a medium-sized, cast iron saucepan on the side burner. Bring to a boil then reduce heat to simmer for 20 minutes.

Remove BBQ sauce from heat and let cool for 10 minutes. Discard the whole habanero pepper. Add remaining sauce to a blender and blend until smooth.

Once cauliflower is done, brush peach BBQ sauce over it. Cut pieces and serve.
