Taco Stuffed Avocados
Taco Tuesdays may never be the same with these taco stuffed avocados. Load your grilled avocado with taco meat, cheese, tomatoes, green onions and top with a dollop of sour cream.
Ingredients
FOR THE AVOCADOS
- 6 avocados, ripe
- 1/2 cup olive oil
FOR THE TACO FILLING
- 2 tablespoons olive oil
- 1 1/2 pounds ground beef
- 2 tablespoons chili powder
- 1 jalapeño pepper, finely chopped
- 2 teaspoons lime juice
- 1/2 cup shredded cheddar cheese
FOR THE TOPPINGS
- tomatoes, diced
- green onion, chopped
- sour cream
Directions

Preheat your grill to 500°F.

Slice avocados in half, remove pit and brush with olive oil.

Place directly onto grill grate, cut side down. Cook for 2 minutes and remove from grill.

Reduce heat to 350°F.

Heat cast-iron skillet with 2 tablespoons of olive oil.

Combine ground beef, chili powder, pepper and lime juice. Cook for 10 minutes until ground beef is browned.

Stuff avocado halves with taco filling and top with cheddar cheese.

Place on top warming rack, skin side down. Cook for 10 minutes.

Remove from grill and top with tomatoes, green onions and sour cream.
