Want a flavorful and juicy piece of smoked chicken? Try smoked chicken thighs. Full of delicious dark meat, chicken thighs are incredible when smoked. Naturally more moist than other parts of the bird, their higher fat content renders nicely in a smoker.

Ingredients

FOR THE SMOKED CHICKEN THIGHS

  • 6 chicken thighs
  • 4 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 garlic cloves
  • 3 scallions
  • 1/2 tablespoon thyme
  • 1 teaspoon allspice
  • 1 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon crushed red pepper

Mix soy sauce with sesame oil and lightly rub into the chicken thighs.

In a food processor, combine garlic cloves, scallions, and spices until smooth. Rub the mixture onto and underneath the skin of the chicken thighs.

Seal chicken in a plastic bag. Place the bag in the refrigerator and let marinate for a minimum of 4 hours.

Preheat smoker to 225°F and add cherry wood chips.

While the smoker preheats, remove the chicken thighs from the refrigerator. You will want to remove them at least 30 minutes prior to cooking. Discard the marinade and place the thighs into the smoker.

Smoke for 2 hours, rotating throughout the cook. The chicken thighs will be done once reaching an internal temperature of 165°F.
