Sometimes big flavor comes in small packages, like these tasty Chicken Fajita Sliders. Loaded with juicy, shredded chicken breast, bold Tex-Mex spices, and sweet bell peppers, these savory and cheesy sandwiches pack everything you love about chicken fajitas into a compact little bun.

Tania made the dish on our Char‑Broil® 2-Burner Tabletop Gas Griddle, but you can make it on any griddle.

Ingredients

For the sliders

  • 2 large chicken breasts, sliced into strips
  • 3 tablespoons olive oil
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons Kosher salt
  • 1/2 teaspoon black pepper, ground
  • 1 yellow bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1 1/2 cups shredded Mexican cheese, plus more if desired
  • 12 slider buns, sliced in half lengthwise
  • > salt and pepper, to taste
  • > vegetable oil, for the grill

Directions

In a small container, combine the chili powder, cumin, paprika, garlic powder, oregano and salt.

Slice the chicken breasts into thin strips and set aside.

Cut the onion, red pepper, and bell pepper into thin slices. Set aside.

In a large bowl, combine the chicken, 2 tablespoons olive oil, the spice mix and lime juice until the meat is evenly coated.

In another bowl, combine the onion, peppers, olive oil and salt. Set aside.

Preheat your Char-Broil grill to medium or medium-high heat.

When the grill is ready, drizzle with vegetable oil and place the chicken on the right side of the hot flat top.

Cook the chicken until the internal temp reaches 165ËšF, about 5 to 8 minutes.

While the chicken is cooking, add the onions and peppers to the other side of the grill and cook until tender and slightly charred.
10.
Using a spatula, mix the onions and peppers into the chicken.

Top with the shredded cheese and cover until the cheese is melted, about 1 to 2 minutes.
12.
Slice the slider buns and toast on the empty side of the grill for 1-2 minutes.
13.
Add the chicken fajita mix directly to the bottoms of the slider buns and top with the upper halves.
14.
Transfer the sliders from the grill to a serving plate and dig in.
